New Recipes

2 new recipes from this past weekend at the boat.

Corn Salad with Avocados
This was partially a recipe that I came up with and one that I got from the lady that works at the farm market. I couldn’t even tell you how much of each ingredient that I put in the bowl (oops…mom taught me well). The ingredients included corn, onion, oil, pepper, cucumbers, and avocados. I was going to put tomatoes in it too but I completely forgot about it. I am ok with that. It was really good the way it was.
 Blueberry Lime Salsa This was one from my brother and he found it here. This one was awesome! We couldn’t believe how good this one was and it is a definite keeper.

Chicken on the Rotisserie

Last weekend, Sean was itching to roast a full chicken on the grill. He had been for weeks. We finally got a chicken and he went to town. We had never used the rotisserie on the grill before or roasted a full chicken so it was going to be an experience.

Sean did such a great job with it though. 3 hours later we had a nicely browned seasoned chicken. And it was oh so yummy!

Apparently putting a potato in the middle of it is supposed to help hold the chicken in place on the rotisserie. It seemed to work well.Untitled

The leg with a side of potatoes and onions and I would say that we had an awesome dinner. I would say that we will probably try this again next fall or maybe in the spring. 

March 14th

Today has been an interesting day. We spent the day at home since Sean had a outpatient procedure done yesterday, it has been lots of rest and relaxation for him today! I worked most of the day (thank goodness I can do that from my computer).

We might have found another series to add to our list to watch now, Mad Men. We are currently also watching House of Cards. Both on now on the addicting list!

Today is actually my momma’s birthday!

DSC_0097This was two years ago when I got to fix her birthday cake for her. (This cake was otherwise known as Crumbles and Fudge by my brothers!) I always have a hard time when I don’t get to be with mom on her birthday but I know that Dad will do something special and she has gifts to open from us that got there yesterday! It wasn’t anything super exciting this year but that is ok. I hope she enjoys them!

Today is also Pi Day, ya know as in 3.14159 (sorry that is all I know!). I always get excited when I am at school because we have a teacher in the Middle School that always has a party for her students. I normally get to go participate which is always lots of fun! Since I wasn’t there today I made a pie of our own!

I also should mention that I tried something new tonight and they were super awesome! I made homemade potato chips. Sooooo much better then what comes in the bag! I could get used to making them more often!

Lots of different flavors too, Old Bay, Jerk, and Salt and Pepper.

For the day that it was it was a pretty good day! Let’s just hope the mister keeps healing properly and doesn’t have too much pain!

The Christmas Tree Tradition

 

Last year I wanted to see how Sean would do with cutting down a tree rather then just going to a lot and picking out a tree. We really enjoyed it last year so it was on the must list to do this year.

We go to a place about 30 minutes north of our house. This tree farm is huge and you never know where they will drop you off to let you start roaming. This year we were dropped off in almost the dead center of this picture far behind the white building you see. Way back there.DSCN4540

This year, unlike last year, we walked and walked before finding a tree that we agreed upon for our house. We had a very difficult time for some reason. There were many trees that one of us liked but not the other.
DSCN4541Until we finally found this one! We thought it was about the same height as the tree we had last year but we were so wrong. This thing was a beast and it weighed a ton!

We did remember a tarp for Sean to be able to cut down the tree and it worked very nicely since it rained quite a bit the day before.DSCN4545DSCN4547DSCN4549DSCN4551DSCN4552

Once he got the tree down, he thought he was going to be able to drag the tree by himself while I carried the other supplies but unfortunately it was so super heavy that it ended up taking both of us to drag it get shaken and wrapped.

Even this guy had a time carrying the tree. I am telling you is a super heavy tree.DSCN4566

Once we got the tree home we left it outside to dry out for a bit and for Sean to go do some other things during the day. Later that night we moved the tree in the house which was an experience since the tree really is about 10 feet tall. Once we got it in the house, Sean started taking off the wrapping and it started to fall out. DSCN4568DSCN4573DSCN4574DSCN4575We had to give the tree some time to fall out and get settled in the house! So we were able to get it decorated the next day. Well only after going out and getting more lights because we didn’t have enough to cover the tree. So our tree has about 850 lights on it and all of the ornaments. Last year we weren’t able to put all of the ornaments on the tree because we had too many. I guess it takes a 10 foot tree to get all of the ornaments on the tree.

From the Farm – Pesto Potato Pizza

When Sean and I were in college, one of our drunk go to foods was pizza. We both loved it and there was something oh so good about a pizza at 2am. Our favorite place to get pizza from was Mad Mushroom. Everyone would typically go for their cheesy bread as it was cheep and a great option. We enjoyed it but we quickly found we had a new favorite. They were gourmet pizzas that had toppings like pesto, potatoes, and other no so typically toppings for pizza. Neither of us cared because the pizzas were outstanding.

I think that we may have tried this one other time but it was time again to take a chance and see if we could make the Basil PotatoHead pizza. This pizza was regular crust, a layer of pesto, cooked potatoes, onions, and lots of cheese. I can’t say that it was a Mad Mushroom pizza but it was pretty good. It was super easy too!

DSCN4456I think we still may have to make a visit back to Purdue and go to Mad Mushroom just to get a gourmet pizza because they really were that good!
