2 new recipes from this past weekend at the boat.
Corn Salad with Avocados
This was partially a recipe that I came up with and one that I got from the lady that works at the farm market. I couldn’t even tell you how much of each ingredient that I put in the bowl (oops…mom taught me well). The ingredients included corn, onion, oil, pepper, cucumbers, and avocados. I was going to put tomatoes in it too but I completely forgot about it. I am ok with that. It was really good the way it was.
Blueberry Lime Salsa This was one from my brother and he found it here. This one was awesome! We couldn’t believe how good this one was and it is a definite keeper.
When Sean and I were in college, one of our drunk go to foods was pizza. We both loved it and there was something oh so good about a pizza at 2am. Our favorite place to get pizza from was Mad Mushroom. Everyone would typically go for their cheesy bread as it was cheep and a great option. We enjoyed it but we quickly found we had a new favorite. They were gourmet pizzas that had toppings like pesto, potatoes, and other no so typically toppings for pizza. Neither of us cared because the pizzas were outstanding.
I think that we may have tried this one other time but it was time again to take a chance and see if we could make the Basil PotatoHead pizza. This pizza was regular crust, a layer of pesto, cooked potatoes, onions, and lots of cheese. I can’t say that it was a Mad Mushroom pizza but it was pretty good. It was super easy too!
I think we still may have to make a visit back to Purdue and go to Mad Mushroom just to get a gourmet pizza because they really were that good!
This year I decided to get a whole box of tomatoes and start making some sauce. Spaghetti sauce is a favorite around our house and last year we discovered that we really like the homemade stuff better then the store bought stuff. So this year my mission was to make enough sauce to last us through the winter. I started with a full box of tomatoes (they were seconds so there were a few spots in them but nothing terrible).
I cut all of the tomatoes up but I had to do it in shifts because they wouldn’t’ all fit in the pan at the same time. I think I filled the pot four times total that day!
We ended up with 20 containers of spaghetti sauce but let’s see how long it lasts.
I even made fun labels for the tops of the containers! (I do have a problem of putting things in containers and then I don’t know what is in there so it was good to put labels on containers!)

Holy cow I made these a long time ago but they were awesome options!
I made some refrigerator pickles. I had to get a big container because I didn’t have one big enough. Once I finally got the container, I cut up all of the cucumbers, then I cut up jalapenos and banana peppers. Once I had everything in the container I just started pouring vinegar. I used some apple cider vinegar and then used the rest regular vinegar. I put in some fresh dill, some dill seed, a little bit of sugar, and some pepper. The pickles are spicy but awesome!
We’ve had them on everything from hamburgers to fish sandwiches to just eating them. So very good!
Item number two was Cantaloupe Sorbet. I don’t remember exactly what I did but I am pretty sure that I just blended the cantaloupe until it was pretty much liquid and then I added a little bit of vodka so that it wouldn’t freeze all the way and a little bit of sugar water. It is very excellent.
One of my favorite things about summer is the amount of tomatoes that we get from the farm. When I lived at home, we had family members that always ended up giving us a good amount of vegetables that they worked so hard to raise. It was awesome. I also really like salsa.
I had found a recipe on The Pioneer Woman that quickly became one of my favorite recipes for salsa. I wanted to try to make it even more fresh then using the can of tomatoes and I feel like I accomplished it for the most part. I did roast the tomatoes to get them some what like what they come out of the can and so they would crush a little better.
It turned out pretty good but I think I added a few too many fresh jalapenos in it though. I really enjoyed it but I think it is a little too spicy for the mister.
