The other night I knew that I wanted to make some sort of pork with tomatoes and mushroom dish but I wasn’t exactly sure how I wanted to do this. So I dove in and tried. Let’s just say that it turned out a lot better then what I thought it was going to be. I didn’t take any process pictures but here is what the final product turned out looking like.


I cooked the pork on one of my cast iron gill pans. The mushrooms, tomatoes, and spinach cooked in a pan with a little bit of olive oil. Mr Man of the House decided that it would be exciting to have a little wine in with the veggies. We had this St. Michaels Gollywobbler Pink wine (that was actually for my mom to drink but we didn’t open it then) that we both thought was a little too sweet for our taste. It gave the veggies an interesting taste. I left most of the liquid boil off of the veggies because there was a lot of it. I did add some fresh basil to the pan as well because we have so much of it right now! Once the pork was finished I topped it with the veggies and then a piece of white american cheese. Very very good!

The only change we would make is to use a dry white wine instead of the sweet pink wine!
