Recipes from the past two weeks

Lately I have been planning meals two weeks out and doing all of the grocery shopping all at one time. So theatrically I only go to the grocery.  I was waiting to post about some of the food until we actually tried all of the recipes to see how they turned out!

{Side note: I forgot to take pictures of all of this food so it may look like a lot more words then normal!}

The first recipe that I made was General Tso’s Chicken. I was leery about making this since I have made other Chinese dishes and they haven’t turned out to be fantastic. This did not disappoint though, it turned out awesome! It wasn’t too hard to make and we both really enjoyed this dish! I found the recipe here.

Next up for us for Roasted Veggie Mac and Cheese. It was a Friday in Lent meal if you couldn’t tell. I wanted something easy to do before our Murder Mystery Party and this was perfect. It just made a lot! I wasn’t expecting it to make so much but we took it for lunches!

One recipe that I was very excited to try was the Chicken Gyros. As a kid, when we would go to Harvest Homecoming I remember getting Gyros there. That was about the only time I ever had them so I was really excited when I found a recipe that I could use chicken with instead of trying to cook lamb. These turned out really good and Sean even seemed to enjoy them. One thing I didn’t do was make the sauce earlier enough. You are supposed to let the Yogurt get less watery by putting it through cheesecloth. I didn’t have time for that and we thought it turned out pretty good! I made honey dijon slaw, which I don’t have a recipe for because I just threw ingredients together. It turned out alright!

The last meal that I fixed was one tonight. I had seen this done multiple times on Pinterest and thought that it would be interesting to try. The mister absolutely LOVES Lasagna. So I knew this would hit a homerun when he tasted it. Instead of making normal Lasagna, you roll it all up in one noodle. I didn’t really use a recipe for this I just made the ingredients and then covered the noodles with the ricotta and meat and rolled it up. I also found a copycat recipe for The Old Spaghetti Factory’s Creamy Pesto Salad Dressing. So we had salad as well. Homemade croutons and homemade dressing! Yummy salad!

Over the next couple of weeks it will be recipes from the newest Raechel Ray Magazine! Should be some good food!
