Recipes from the farm….3 ways to fix zucchini

Lots of food to post about. There is one more post behind this one about some other really great food but let’s focus on this one……and the Zucchini. We have not only had an abundance of asparagus but we have also had a lot of zucchini as well. I enjoy both but I have a hard time finding different ways to fix it when you have it that many times.

So first on the list is Grilled Zucchini spears. I sprinkled these with a little bit of salt and pepper and Sean through them on the grill with the tuna that we were having that night. I think they were only on there for about five minutes and they were done. So good and so easy!

The second one I decided to try was Zucchini Fries. I lightly coated sliced zucchini spears and dropped them in the a little bit of oil. They turned out awesome! I did sprinkle them a little with parmesan cheese and a little bit of balsamic vinaigrette.

The third and last that I fixed this last week was Stuffed Zucchini. This was a pretty good one as well. I cooked the hamburger and then added mushrooms and onions. I cut the zucchini in half topped it with the hamburger, mushrooms and onions and baked it for 30 minutes on 350 degrees.
This one did need a little bit of sauce on it because it dried out some. We used Chili Sauce on it and it was good.
