Recipes from the Farm…..Salad, salad, and more salad.
When you get a whole bunch of food on a Tuesday and you aren’t going to be home all weekend, it can be hard to figure out what you want to do with all of it and not waste it! In our house you make a whole lot of different salads and take them with you on the boat.
This turned out to be an awesome choice on our part because they were all cold foods and the weekend happened to be very hot. The three salads that we made were a coleslaw, a traditional tomato-cucumber salad, and a potato salad. Listed below you will find the ingredients that I used in each. Unfortunately I inherited from my mother the inability to measure anything when I am cooking. I just look at it and when it looks like it is a good amount that is how much I put in it. (Sorry in advance)
I used red cabbage, cilantro, onions, lemon juice, apple cider vinegar , whole grain dijon mustard, and some sugar in this one. Everyone really enjoyed this slaw. It was a very lite and summery dish.
Next up was the tomato -cucumber salad. This was always a traditional summer dish at home and decided that this would be good to try.
A couple of tomatoes, an onion, a cucumber, some vinegar and some oil. Yep and maybe just a little bit of pepper! Oh so good.
Lastly was a potato salad and this was a big hit and soooo easy to make!
A couple of red potatoes, a couple of eggs, the frozen dill that was fresh, an onion and some mayo. Mix together and voila!
