Recipes from the Farm – Hashbrowns, Succotash, and Peach Salsa

A couple of dishes I have made this past week with the food we got in our CSA included homemade hashbrowns, succotash, and then a peach salsa to put over grilled mahi mahi. All of these turned out very good. Since I didn’t use recipes for any of these I was a little nervous to feed Sean just because I don’t always know how he will like dishes I make. Most of the time he really likes ¬†what I fix but I never know.

First up was hashbrowns.
DSCN4388Honestly this was something I learned to make from my momma. I watched her do this many times but a lot of times she used frozen potatoes. Since I had fresh potatoes and I had never made hashbrowns for Sean…why not?

I used about 5 fresh red potatoes (I pre-cooked these for a few minutes in the microwave), sliced green peppers, sliced onions, and one banana pepper sliced up very small. I drizzled with oil and let them cook until they got brown.

They were awesome!

Next up was succotash.

We got fresh corn and green beans last week as well. Since we weren’t home over the weekend I needed something that included both of these because I didn’t want anything going bad. And who can complain combining these two veggies.

Simply put I cooked them together and put a little butter on them. Yum.

Lastly was peach salsa.

DSCN4395I had no idea how this was going to turn out but we had peaches that were starting to go bad. I pulled a few other things out of the refrigerator and voila!

Ingredients that I used:

2 peaches
Sliced green pepper (about a 1/4 of the pepper)
Sliced red onion
Sliced banana pepper
Fresh mint
Fresh squeezed lemon juice

Mix together and refrigerate for a short period of time before serving. I served this over mahi mahi but it would also be very good over chicken as well.
