Chicken Fajita Enchiladas


Sean insisted that I write about this one because he loved this. I think he would have eaten all of it if I would have let him. He loved it!

This dish was super easy.
DSCN4628I started off with putting a couple of chicken breasts in the crockpot and cooked them for 6 hours on low. They fell apart. I then cut up a handful of sweet peppers and onions and sauteed them.

I used the enchilada sauce on the bottom of the pan and then put down two taco sized tortillas in the  baking dish. I then took the shredded chicken and layered it with some more of the enchilada sauce. Two more tortillas on top of that. Then it was a layer of peppers and two more soft taco shells. The whole thing was topped with the last of the enchilada sauce and cheese!


I baked it for 40 minutes at 400 degrees. Voila! It was amazing!
