The Not so Smoky Cheesy Potato Soup

One year either at Christmas or Easter, my mom’s family decided we were going to have soup, sandwiches, and salad as our meal together. My mom volunteered to make Cheesy Potato Soup. She made  a great effort but realized that the bottom of the pot was burning. She thought it would be fine, until we all tasted it and realized that it had a smoky taste to it. She won’t make cheesy potato soup anymore. It is ok , we understand!

So you will understand when I say that I was a little nervous when I decided to make Cheesy Potato Soup at our house. We both had been craving it for a while and I just couldn’t bring myself to do it. I even baked the potatoes once and cut them up and then ended up making mashed potatoes out of those potatoes.

When thinking about how I wanted to make this soup, I looked at several recipes and honestly couldn’t find one that I had all of the ingredients for so I just started dumping into the pot.

I started out with some of the main ingredients that I had seen in other recipes. 2 cans of Cheddar Cheese Soup, 1 1/2 cans of Chicken Broth, Garlic Powder and Potatoes.

I started by sauteeing the onions in the pot with butter.

While the onions were cooking, I stated cooking the potatoes in the microwave I think it took about 10 minutes for all of these potatoes to cook.

Once the potatoes and the onions were done, I started chopping the potatoes. After all ingredients were ready to go, I poured the other ingredients into the pot and let it cook. I did have to stir everything about every 15 minutes.

It turned out very good and not smoky at all! I was very proud of myself for figuring this one out and not burning anything!


Not So Smoky Cheesy Potato Soup

2 cans of Cheddar Cheese Soup
1 1/2 cans Chicken Broth
8 Red Potatoes
1 1/2 cups Milk
Onion
Butter
Cheddar Cheese
Sour Cream
Bacon Bits
A couple of shakes of Garlic Powder

Put the butter in a pot and sautee the onions until cooked. Cook potatoes in Microwave until cooked almost all the way through. Chop potatoes into small pieces. Add Cheddar Cheese Soup, Chicken Broth, Milk, Garlic Powder and Potatoes to pot. Cook on low for 45 minutes to 1 hour. Use Cheddar Cheese, Sour Cream, and Bacon Bits as garnish.
